A very nice vegetable dish with super flavor and packed with vitamins. For the kids, I always serve whole wheat rice with it.

Such a topper of a weekday recipe this!!! Kids love it, parents too! By replacing the rice with carrot rice you have a vitamin bomb you can't beat! I get the ready-made carrot nasi at AH. These are next to the fresh cauliflower rice.
300 grams of chicken breast or chicken thigh
bag of carrot nasi (ALBERT HEIJN)
bag of nasi vegetables
2 chopped garlic cloves
1 chopped yellow onion
2 eggs
2 tbsp soy sauce
1 tbsp fish sauce
1 tsp curry powder
1 tsp turmeric powder
1 tsp ginger powder
1 tsp garlic powder
1 lime
wok oil or coconut oil
sambal to taste
Cut the chicken into small cubes, like it when they are really smaller, they get juicy sooner, especially chicken breast
Fry them until tender in some wok oil
In a wok put some wok oil and fry the onion and garlic
When these are glazy, then add the nasi vegetables let cook for a minute or 2, stirring occasionally
Now add the dry spices
Stir everything well for a few minutes until the vegetables are tender, now deglaze with the soy sauce and fish sauce
In a separate pan with some oil, fry the root vegetables. Add the garlic powder and a pinch of salt and keep stirring well until cooked.
Now add all the ingredients together, the chicken with the vegetables and the nasi. Fry for a few minutes so that all the flavors can be absorbed, sprinkle with lime juice if desired.
Check if you need to salt
Fry another egg and serve it on top with some nice sambal
