Super Healthy Salad

After a period of many wrong food choices and well, some drinks here and there, I was looking for a super healthy salad to take better care of my body. I came across a raw-food salad on an American food blog and that was the inspiration for my version of this super healthy, but (how nice) especially super tasty salad! Especially the crunch that gives the salad an extra touch also makes the dish so healthy. Pumpkin seeds and sunflower seeds are truly superfoods, bursting with vitamins and minerals. This includes the turmeric that the seeds are roasted in, this is also called the "healing, magic root." Do I need to say more? For my guy and kids, I served a side of meat, but I was happy with just this healthy salad! It is now on the table here regularly.

Ingredients

  • half savoy cabbage
  • half red cabbage
  • 10 sprouts
  • 1 broccoli
  • handful of goji berries
  • 2 tablespoons coarse dijon mustard
  • 3 tablespoons of extra virgin olive oil
  • 2 tablespoons of good balsamic vinegar
  • himalayan salt to taste
  • fresh ground black pepper to taste
  • 4 tablespoons of pumpkin seeds
  • 3 tablespoons of sunflower seeds
  • 1 tablespoon turmeric
  • baking spray
  • handful of hemp seeds

How to

  1. Cut the savoy cabbage and red cabbage into very thin strips and rinse under the tap. Wash the Brussels sprouts and broccoli well too and then cut the sprouts into thin slices and cut off the tops of the broccoli. Doesn't have to be neat but you should actually get mini florets here, so not just the little balls at the end of the broccoli. Put all the vegetables in a bowl and add the goji berries. Save the rest of the broccoli, including the stem for a delicious turmeric broccoli soup.

  2. Add the mustard, olive oil, balsamic the salt and pepper together in a bowl or in a dressing mixer and mix well.

  3. Put a skillet on the heat and add some baking spray. Put the kernels all in the pan when it is hot and keep flipping them so they don't burn. After half a minute, add the turmeric and possibly the salt, keep flipping like this until the kernels are nicely golden brown.

  4. The dressing may be added to the salad right away. You can make all this before. The crunch and hemp seeds are best added at the very last minute to keep their crunch.
