Pizza Healthy Style

Since I am always looking for products that replace carbohydrates in my meal, I became very happy when I came across this dish on an American blog. A healthy pizza, impossible? No way! This one is super healthy! Note: I don't think it has much in common with a real Italian dough pizza except for the shape and the fun toppings though. The taste is really different, but I find it super tasty. You can vary the toppings nicely, I choose vegetables I want to put on top and then a matching sauce. Like in this dish, this can be really easy, or you do extra effort on a good basic sauce if you have a little more time.

As a topping here I chose beet with goat cheese and kale pesto and tomatoes with kale flakes. Kale is of course a real winter vegetable but nowadays available all year round and it is sooooo super healthy and versatile that it's actually a shame to only eat it in your stew in winter. It is bursting with vitamins and minerals and contains a lot of fiber which makes you satiated longer (which is good for your figure). In America (mainly New York) "kale" is really a hype and is often on the menu of restaurants. DUS: eat more kale! You can bake it, steam it, stew it, stir-fry it, make it into chips, use it as a salad and smoothie base, among other things.

Cauliflower base ingredients

  • 1 cauliflower
  • 3 eggs
  • 100 grams of almond flour
  • coarsely ground himalayan salt and pepper
  • Italian herbs teaspoon

How to

  1. Preheat the oven to 200 degrees. Wash the kale, pat it dry and cut into coarse pieces so it all fits in the food processor. Using the food processor, make it all into very small crumbs.

  2. Place a sheet of baking paper over a baking sheet and spread the cauliflower over this. Put this in the oven for 20 minutes. Stir in between.

  3. After 20 minutes you take the cauliflower out of the oven and let it cool a bit. You take a clean tea towel and put the cauliflower grains in this and now squeeze all the moisture out very hard.

  4. Put the cauliflower in a bowl, add the almond flour, eggs, spices and salt and pepper. Mix this all together well ear until it becomes a mass (preferably with your fingers). Now spread it on a baking sheet. I made 2 rounds with small raised edges. Now put them back in the oven for 30 minutes.

  • handful of parmesan cheese
