This mixture is my seasoning for a huge number of dishes. Started as a mixture for boiled egg on a cracker, but now I sprinkle this on chicken, grilled vegetables, meat and fish. But also the perfect mixture for a good curry paste, meatballs and a base for a tasty dukkah if you complement it with chopped nuts. The latter is again totally top as a topping for a salad, for example.
Preparation time
10 Minutes
1/2 tsp fennel seeds
2 tsp coriander seeds
1/2 tsp mustard seed
1/4 tsp white pepper flakes
1/2 tsp curry powder
1/4 tsp cardamom powder
1/4 tsp nutmeg
1/2 tsp garlic powder
1/4 tsp chili powder
1/2 tsp onion powder
1/4 tsp fine himalayan salt
1/2 tsp turmeric powder
Add the first 4 ingredients in a frying pan and roast briefly. Let cool a bit and then grind them finely in a mortar.
Add the rest of the ingredients and done!
Taste, if you want to add more salt, be my guest!
