Chicken - coconut - spinach with glass noodles

Today a deliciously flavorful and healthy Asian main dish. You can also omit the noodles if you want to eat no carbs at all. But the glass noodles are already low in its carbohydrate values. If you omit the noodles add extra vegetables to give it body like: broccoli, cauliflower, zucchini, bell bell pepper, white cabbage etc.

Ingredients

  • 400 grams of chicken thighs

  • 150 grams of spinach

  • 2 cloves of garlic

  • half a red pepper

  • 1 tablespoon of coconut oil

  • piece of ginger

  • 1 large red onion

  • 100 grams of coconut rind

  • 2 tablespoons of fish sauce

  • 1 stalk of spring onion

  • 75 grams of uncooked glass noodles

  • 2 tablespoons of fish sauce

  • 1 lime

  • himalayan salt

How to

  1. Chop the onion, garlic, ginger and red pepper.

  2. Chop the chicken thighs in a food processor until minced

  3. Heat the coconut oil in a thick-bottomed pan.

  4. On low heat, gently soften the onion, garlic, ginger and red pepper.

  5. After this add the chicken, add some himalya salt turn up the heat a little and fry until done, in time turn down the heat again so your spices don't burn.

  6. Coarsely chop the spinach into smaller pieces and add to the chicken mixture

  7. Allow the spinach to wilt.

  8. Now add the coconut and fry briefly. Then add the fish sauce (Stinks at first :-)) and leave it on low heat for another minute. Let it cool down.

  9. Prepare the noodles according to the package and then when it's cooked cut this into some smaller pieces, I always find it a little easier to eat.

  10. Add the noodles to the chicken, spinach, coconut mixture and add the soy sauce and juice of 1 lime

  11. Serve with some rings of spring onion.
