To celebrate summer, even though it disappointed us a bit, I have yummy homemade ice creams for you. Fun activity for the kids during summer vacation. It's healthy, at least; if you put fruit in it of course and tasty. You can also make grown-up versions if you have a dinner party for friends. For example, one of Gin&Tonic - mix gin and tonic with lemon or lime juice, cut slices of cucumber and place these slices in the holders, then pour the mix on top. These do need a lot longer in the freezer really 12 hours.
You can buy these handy ice cream holders everywhere and with the filling you can go either way. I have four variations for you:
The yellow:
- Pineapple
-Coconut rind (handful)
-Amandel milk (small splash)
The red:
-Watermelon
-Mint
The white:
-Greek yogurt
-Raspberries
-Blackcurrants
-Hardberries
-Honey
And the idea is that you just dump everything in the blender. Check the proportions yourself, there's little you can do wrong with that.
With the yogurt version, I chopped the fruit first, so not in the blender, and stirred it into the yogurt along with the honey. Love the bits of fruit in this one. You can blend it though, that way you get an even substance.
Pick your favorite fruit, throw it in the blender, wait at least 4 hours (the yogurt ice creams are ready a little faster) and VOILA! You make your kids totally happy and they hardly notice they are eating fruit.
