Edamame Hummus

Do you also love hummus so much? I very often have it in a container in the fridge to spread on my cracker deliciously. To vary this I used edamame beans here. You can buy these at the toko, frozen and out of their skins, making them super easy to use in this dish, but of course also in lots of other dishes like in a curry or a salad. These loose edamame beans are also available at Albert Heijn in the salad section.
Adding
pomegranateis super healthy and super fresh!

Ingredients

Edamame hummus:

  • 100 grams of edamame beans

  • 2 tablespoons of tahini

  • 2 tablespoons of water

  • 2 tablespoons of olive oil extra virgin

  • handful of coriander

  • juice of 1 lime

  • 1 clove of garlic

  • pinch of himalayan salt

  • fresh milled pepper

Rest:

  • pomegranate

  • cilantro

  • quinoa rice cake

How to

Put all the edamame spread ingredients together in a food processor and blend until it is a smooth paste. Taste and add another ingredient such as pepper or salt if necessary.

Spread the hummus on the rice cake and top with some pomegranate seeds and cilantro.
