Cauliflower couscous & vegetable ribbons

The first few days of the week I am always fairly strict with myself. Usually the reason for this is a far too enjoyable weekend. After a few days of lots of vegetables and lots of exercise, I always feel wonderful again, ready for another weekend so to speak :-)) Anyway, I now have such a delicious, fine, healthy dish for you. Lots of vegetables, vegetarian and packed with vitamins. Detox-Time!

Cauliflower couscous & vegetable ribbons Print Recipe
Serves: 2 Cooking Time: 30 min


  • 1 whole cauliflower

  • 1 zucchini

  • 1 cucumber

  • hand coin

  • hand coriander

  • sesame seeds 3 tablespoons

  • 2 tbsp sesame oil

  • 1 tbsp mirin

  • 1 tbsp soy sauce

  • 1 lime

  • 1 tsp chili flakes

How to

  1. Add all the dressing ingredients together: one and a half tablespoons of sesame oil, the mirin, soy sauce, the zest and juice of the lime and the chili flakes. Set aside.

  2. Grate the cauliflower and fry it in the rest of the sesame oil for a few minutes until it turns light brown. Finally, add the sesame seeds and fry very briefly.

  3. Shave ribbons from the cucumber and zucchini. Put all the ribbons in the bowl, chop the herbs and add them. Add the dressing and make a nice bowl of all the yummy vegetables.
