Healthy Burger

Does it drive you crazy? That at the beginning of every new year you are bombarded with the latest weight loss methods, shakes, sport packages etc. I find that so mega unsociable after Christmas and well also confronting, so I'm going to be cross. Because I eat healthy (almost) all year, that first week of January is no different, but I like to do it in a fun way. So I came up with a super healthy burger for you! Of course, you can add light cheese to it. But even I need to lose some Christmas pounds so I'll stick with this version. My kids loved it and even my husband, a real carbohydrate eater, loved it. You can make sweet potato fries with it. So then you are really eating fries with burgers: NICE! I say a good start to 2016 :-))

Ingredients

  • 1 eggplant

  • 1 zucchini

  • 4 tasty-tom tomatoes

  • basil

  • 1 large onion

  • 3 slices of pancetta

  • 2 cloves of garlic

  • bag of rocket

  • ketchup

  • 500 grams of minced beef

  • 1 egg

  • 1 whole wheat cracker crumbled

  • 2 tablespoons of chili sauce

  • 3 cloves of garlic finely chopped

  • 1 chopped onion

  • 1 tablespoon of soy sauce

  • 1 teaspoon roasted paprika

  • 1 teaspoon of mustard powder

  • 1 teaspoon chili pepper

  • quite a bit of coarsely ground pepper

How to

  1. Preheat the oven to 200 degrees. Cut the eggplant into at least 12 slices. Coat them with olive oil and salt and pepper. Place them in the oven on a baking sheet and bake for about 20 minutes. Be careful not to overcook them and turn them halfway through.

  2. Now make the burgers. Put the minced meat in a bowl and add the egg, cracker, chili sauce, garlic, onion, soy sauce, paprika, mustard powder, dhili pepper, pepper and salt. Mix this well and make 3 burgers. Fry these cooked in olive oil in a frying pan. If you have too much, make some more small meatballs for the next day.

  3. Slice the tomatoes.

  4. Slice the zucchini, spread with olive oil, pepper, salt and a squeezed garlic clove and fry in a pan for one minute on each side.

  5. Cut the onion into half rings and fry it too in a pan until tender.

  6. Fry pancetta in a pan without fat, drain on paper towels

  7. After this, you can start stacking the burgers. Start with arugula, then 2 slices of eggplant, the burger, ketchup (I like to use the super tasty ketchup variants from Nicolas Vahe), tomato, zucchini, onion, pancetta and again 2 slices of eggplant as a substitute for the bun. Finally some basil on top and done!
