Does it drive you crazy? That at the beginning of every new year you are bombarded with the latest weight loss methods, shakes, sport packages etc. I find that so mega unsociable after Christmas and well also confronting, so I'm going to be cross. Because I eat healthy (almost) all year, that first week of January is no different, but I like to do it in a fun way. So I came up with a super healthy burger for you! Of course, you can add light cheese to it. But even I need to lose some Christmas pounds so I'll stick with this version. My kids loved it and even my husband, a real carbohydrate eater, loved it. You can make sweet potato fries with it. So then you are really eating fries with burgers: NICE! I say a good start to 2016 :-))
1 eggplant
1 zucchini
4 tasty-tom tomatoes
basil
1 large onion
3 slices of pancetta
2 cloves of garlic
bag of rocket
ketchup
500 grams of minced beef
1 egg
1 whole wheat cracker crumbled
2 tablespoons of chili sauce
3 cloves of garlic finely chopped
1 chopped onion
1 tablespoon of soy sauce
1 teaspoon roasted paprika
1 teaspoon of mustard powder
1 teaspoon chili pepper
quite a bit of coarsely ground pepper
