This is a recipe that you can go either way with. I smear it with, among other things, a spice mixture that I once bought in a souk in Dubai but have given you a combination of spices here that come pretty close. You can of course serve the cauliflower with a piece of meat or fish, but this dish is vega, if you use soy yogurt then even vegan! It is easy to prepare. You could even marinate the cauliflower in the morning (only makes it tastier) and then just put it in the oven in the evening.
Ingredients
For 2 people, preparation time 60 minutes.
- 1 whole cauliflower
- 200 grams of Greek yogurt/soy yogurt
- 3 cloves of garlic
- half teaspoon roasted paprika (really make sure you don't use too much of this)
- teaspoon turmeric
- half teaspoon ground cumin seed
- teaspoon of onion powder
- teaspoon of ginger powder
- fresh ground salt
- fresh milled pepper
- 1 lime
- generous handful of fresh cilantro
How to
- Preheat the oven to 200 degrees.
- Make a paste by pressing the garlic cloves and mixing them with the juice of a lime, yogurt and all the spices. It is often good to do this ahead of time so that all the flavors mix well with each other. Then spread the cauliflower all over with this mixture - yes nice with your hands yes!!!
- This canker may now go into the oven for an hour, if you have a slightly smaller one put it in for 45 minutes and check with a sharp large knife that you can easily poke it.
- When you're done (and the cooking time depends a bit on the size of the cauliflower) sprinkle it with freshly chopped cilantro and a pinch of paprika to present it nicely.
- The salad served with it here in the photo is not vegan, as it has feta in addition to red beets, spinach and sunflower seeds.
