When we think of a Greek salad, we automatically think of feta cheese, but I make this fresh salad version with halloumi. Halloumi is different because of its texture and tastes fairly salty. But it is precisely because of its structure that it is incredibly suitable for grilling or putting on the bbq. Then you can make great use of this cheese in wraps, for example, or as we are doing today in a salad. Handy also as part of a vegetarian bbq. Confession: actually halloumi is originally from Cyprus, but hey... about 70% of Cypriots are from Greece and the Greek goddess Aphrodite was born there, so we'll stick to 'Greek salad' for convenience. By the way, this recipe can also be made as a burger, just remember to add sandwiches to your shopping list! Great for when kids are eating with you!
2 packages of 225-gram Halloumi Dodoni
80 grams of mixed lettuce
50 grams of spinach
1 container of cherry tomatoes
1 red onion
2 tbsp sushi vinegar
1 clove of garlic
half a cucumber
2 tbsp Greek yogurt
1 avocado
pepper
salt
leaf parsley
Cut the red onion into thin rings. Place them in a bowl with the sushi vinegar.
Heat a grill pan or the bbq. Cut the halloumi lengthwise into slices about 1 cm thick and grill them for about 2 to 3 minutes per side until golden brown. Then cut the slices into strips If you are making burgers, you can leave the slices as they are. Cut the buns in half and then put them on the grill or bbq for a while as well.
Mash the avocado with the Greek yogurt. Add in the chopped garlic and some freshly chopped parsley. Season the avocado spread with salt and pepper.
