The perfect Eggplant

Maybe you already know it, but I really love eggplant. Most people then respond with: I do NOT know how to cook it, with me it's always so hard and tough! I'm going to make your life a lot easier today because it's super easy.

How to

  1. Preheat the oven to 200 degrees

  2. Cut the eggplant into thin slices and place on a baking sheet lined with paper towels

  3. Drizzle some olive oil on top with some salt and garlic powder

  4. Put this in the oven also turn the oven off immediately

  5. Let this cook for an hour and they will have the perfect doneness

  6. Now you can briefly fry them on both sides with some olive oil. They become crispy&tasty nice and fast

So this is a base that you can use for a huge number of dishes.
I have now made a super tasty dish out of it with feta cheese and tomato salsa (the simple version without skinning) In the tomato salsa there is olive oil, lime juice, pepper, salt and garlic powder. 1 shallot chopped and basil. And, of course, lots of tomatoes cut into quarters. Is a nice fresh counterpart to the eggplant. You can also drizzle balsamic vinegar over the eggplant if you like, it's nice and sweet.


This dish is good alongside a piece of meat or fish, or just like that with some quinoa. Add a good amount of arugula to make it a salad. But this is also perfect on the table as part of shared dining menu. Or at the BBQ. You can then briefly fry the cooked eggplant on the bbq.
