So this is a base that you can use for a huge number of dishes.
I have now made a super tasty dish out of it with feta cheese and tomato salsa (the simple version without skinning) In the tomato salsa there is olive oil, lime juice, pepper, salt and garlic powder. 1 shallot chopped and basil. And, of course, lots of tomatoes cut into quarters. Is a nice fresh counterpart to the eggplant. You can also drizzle balsamic vinegar over the eggplant if you like, it's nice and sweet.
This dish is good alongside a piece of meat or fish, or just like that with some quinoa. Add a good amount of arugula to make it a salad. But this is also perfect on the table as part of shared dining menu. Or at the BBQ. You can then briefly fry the cooked eggplant on the bbq.
