The first few days of the week I am always fairly strict with myself. Usually the reason for this is a far too enjoyable weekend. After a few days of lots of vegetables and lots of exercise, I always feel wonderful again, ready for another weekend so to speak :-)) Anyway, I now have such a delicious, fine, healthy dish for you. Lots of vegetables, vegetarian and packed with vitamins. Detox-Time!
Cauliflower couscous & vegetable ribbons Print Recipe
Serves: 2 Cooking Time: 30 min
Ingredients
- 1 whole cauliflower
- 1 zucchini
- 1 cucumber
- hand coin
- hand coriander
- sesame seeds 3 tablespoons
- 2 tbsp sesame oil
- 1 tbsp mirin
- 1 tbsp soy sauce
- 1 lime
- 1 tsp chili flakes
How to
- Add all the dressing ingredients together: one and a half tablespoons of sesame oil, the mirin, soy sauce, the zest and juice of the lime and the chili flakes. Set aside.
- Grate the cauliflower and fry it in the rest of the sesame oil for a few minutes until it turns light brown. Finally, add the sesame seeds and fry very briefly.
- Shave ribbons from the cucumber and zucchini. Put all the ribbons in the bowl, chop the herbs and add them. Add the dressing and make a nice bowl of all the yummy vegetables.
