Super nice dish if you are dieting. It has delicious earthy flavors making it perfect for the cold winter months. There are no carbs in it and also barely any fat.
Not on a diet? Then feel free to add mashed potatoes instead of celeriac puree and top it all off with some nice grated cheese. What's also great is to add some slices of banana and then some Panko. Pretty sure kids will love the sauerkraut too!
1 small celeriac
1 large onion
300 grams of fresh sauerkraut
400 grams of chestnut mushrooms
300 grams of lean beef mince
1 tablespoon coarse mustard
garlic powder
salt and pepper
1 half teaspoon of dried thyme
Remove the skin from the celeriac and cut into coarse pieces
Boil this until tender, then mash with some sea salt and pepper
Chop the onion and fry until glazy
Add the minced meat and some salt and garlic powder and cook until tender
Now add the sauerkraut and stir through
Add the mustard and cook for a few minutes or low heat. Stir frequently
Cut the mushrooms into 6s
In another pan, fry the mushrooms in some olive oil until tender with some garlic powder, thyme and salt
Put the celeriac puree in a baking dish, then top with the minced meat/ sauerkraut mixture and finally the mushrooms
Put this in an oven at 175 degrees for another 15 minutes or so
