Healthy Bread & Lovely Dip

Today a delicious recipe for a super healthy bread. Not a Foodies In Heels original, though modified by me with some other ingredients. I came up with a delicious fresh topping based on Skyr. This really is my new find! Not a yogurt but this is how you eat it, it's a cheese with the texture of yogurt and packed with protein and no fat. It actually tastes like Greek yogurt and you can use it well as a dip. Also a topper for after exercise. The bread recipe comes from a super fun food blog: My New Roots. I always get mega inspiration from her blog and this recipe is such a topper that I don't want to withhold it from you guys. Like I said, I made some minor adjustments, but you can do this yourself by adding or substituting something else. I've also previously added goji berries through it once and figs are also very tasty. Your own home-made fig bread, how you will steal the show with your cheese board when your girlfriends come over for drinks!

Ingredients Heathy bread

  • 140 gr sunflower seeds
  • 90 gr sesame seeds
  • 70 gr hazelnuts
  • 150 gr spelt flakes
  • 2 tbsp chia seeds
  • 4 tbsp. of flaxseed fiber
  • 1 tsp himalayan salt
  • 1 tbsp agave syrup
  • 3 tbsp coconut oil

How to

  1. Preheat the oven to 180 degrees.

  2. Put all the dry ingredients in a bowl and stir.

  3. Now you may put the coconut oil, agave syrup and 340 ml water in a small bowl and stir well.

  4. Add this together and mix into a thick dough. At first it may seem like everything is too wet but the flaxseed fibers are the most absorbent fibers available and will absorb much of the moisture.

  5. Pour everything into a cake pan lined with baking paper, flatten the top with a spoon and let the batter rest covered for 3 hours to overnight. No need to refrigerate.

  6. Now bake the bread for 20 minutes on the middle oven rack.

  7. Remove it from the oven after 20 minutes and place it upside down on the oven rack without baking paper.

  8. Now put it back in the oven for another 40 minutes.

  9. Then let cool before cutting.

Ingredients Lovely dip

  1. 3 tbsp Skyr (my new find! Not a yogurt, but a cheese with the texture of yogurt and packed with protein and no fat!)

  2. hand chopped fresh mint

  3. lime zest from 1 lime

  4. 1 tbsp agave syrup

  5. 1 tsp lavender (if you like it and make sure you take the tasty/edible variety)

  6. 2 generous turns of fresh pepper

  7. 2 generous turns of coarse himalayan salt

How to

  1. Add all ingredients together and stir
